  • 1 cup of pitted and chopped Kalamata olives

  • 1/2 cup of crumbled feta cheese

  • 1/3 cup of toasted pine nuts

  • 2 cloves of minced garlic

  • 1/2 cup of extra virgin olive oil

  • Salt and pepper, to taste

  • 400g of pasta (like spaghetti or penne)

Instructions:

  1. Cook the Pasta: Boil salted water in a large pot. Add the pasta and cook until al dente. Reserve 1 cup of the cooking water, then drain.

  2. Blend the Pesto: In a food processor, combine basil, olives, feta, pine nuts, and garlic. Blend until you achieve a fine consistency. With the processor running, slowly drizzle in the olive oil until smooth. Season with salt and pepper to taste.

  3. Combine: In a large bowl, toss the drained pasta with the pesto. If the mixture is too thick, add a bit of the reserved cooking water to adjust the consistency.

  4. Serve: Plate the pasta, sprinkle with extra feta and whole olives, and drizzle a little olive oil on top. Finish with a fresh basil leaf for presentation.
