Recipe Idea: Creamy Corn and Spinach Risotto

Ingredients:

  • 1 cup San Remo Organic Corn

  • 1 cup San Remo Arborio rice

  • 4 cups San Remo vegetable broth

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups fresh spinach

  • 1/2 cup grated Parmigiano-Reggiano

  • 2 tablespoons San Remo olive oil

  • Salt and pepper to taste

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened.

  2. Stir in the San RemoArborio rice, toasting it lightly for about 2 minutes.

  3. Gradually add vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more.

  4. When the rice is creamy and al dente, gently mix in the San Remo Organic Corn and the fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts.

  5. Remove from heat and stir in the grated Parmigiano-Reggiano. Season with salt and pepper to taste.
