Recipe: Savory Mushroom Risotto

Ingredients:

  • 1 cup San Remo Arborio rice

  • 4 San Remo Mushroom Bouillon Cubes

  • 4 cups of water

  • 1 medium onion, diced

  • 2 cloves of garlic, minced

  • 1 cup of white wine

  • 2 cups of mushrooms, sliced

  • 1 cup of Parmesan cheese, grated

  • 2 tablespoons of San Remo olive oil

  • Fresh herbs (parsley or thyme) for garnish

Instructions:

  1. In a saucepan, combine the water and San Remo Mushroom Bouillon Cubes, stirring until dissolved. Keep it warm on low heat.

  2. In a large pan, heat olive oil over medium heat. Add the onions and garlic, sautéing until translucent.

  3. Stir in the mushrooms and cook until they are tender.

  4. Add the Arborio rice to the pan, stirring for about 2 minutes until it becomes slightly translucent.

  5. Pour in the white wine and let it simmer, stirring constantly until it is mostly absorbed.

  6. Gradually add the warm bouillon stock, one ladle at a time, allowing the rice to absorb the liquid before adding more, stirring continuously. This process should take about 18-20 minutes, or until the rice is creamy and al dente.

  7. Once the risotto is cooked, stir in the Parmesan cheese until melted and creamy.

  8. Serve hot, garnished with fresh herbs.
