  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 can (14 oz) diced tomatoes

  • 4 cups vegetable broth

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

  • A squeeze of lemon juice (optional)

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

  2. Add Lentils and Broth: Stir in the rinsed lentils, diced tomatoes (with their juice), vegetable broth, thyme, and bay leaf. Bring to a boil, then reduce the heat to a simmer.

  3. Cook the Soup: Let the soup simmer uncovered for about 30-40 minutes, or until the lentils are tender. Stir occasionally and add additional broth or water if it gets too thick.

  4. Season: Once cooked, remove the bay leaf and season the soup with salt and pepper to taste. For an extra zing, add a squeeze of fresh lemon juice.
